Study of the key parameters in the migration of photoinitiators

This PhD thesis contains a review about photoinitiators from the food safety point of view, explaining what they are, how they migrate into the food, relevant legislation over the world, and which strategies can be followed for their detection. Different analytical approaches are described for the determination of the photoinitiators and their byproducts by multiple techniques.
The last section of the thesis studies the migration kinetics of 6 of the photoinitiators that produced more health alerts and notifications in the last years. The mathematical model developed from these data allows the prediction of their migration to the foodstuff almost in any case (USC, 29 July 2016).
